Simple Chicken & Vegetable Coconut Curry *Frozen*
Mild enough for children this curry is a great mid week meal. Hooray for meals that feed the whole family! Please note, the vegetables in this dish will change week to week, depending on season and availability.
Ingredients
Chicken thighs, Chicken stock, Coconut cream, Onion, Potato, Zucchini, Celery, Capsicum, Carrot, Silverbeet, Extra virgin olive oil, Rapaura sugar, Sea salt, Curry powder.
Preparation and storage notes
Defrost in the fridge. When ready to serve, transfer to a heat proof dish and warm in the oven for approximately 20 mins at 150C or until warmed through. Serve with rice and a squeeze of lemon.
