Shredded Mexican Chicken
Slowly cooked chicken, Mexican spices, tomato and lime. Serve with soft tortillas with all the trimmings or simply with some steamed rice and a salad.
Ingredients
Chicken thighs, Tomatoes, crushed, Onion, Lime, Extra virgin olive oil, Sea salt, Garlic, Mexican spice mix (Cumin, Paprika, Garlic flakes, Chilli powder, Oregano, dried), Black pepper.
Preparation and storage notes
Preheat oven to 150C. Transfer chicken to heat proof dish. Warm for 20 mins. When ready to serve, squeeze lime over the chicken. Serve with warm tortillas and your favourite taco fillings, or simple over steamed rice with a green salad.
