3-4 Serves - "This T&T (Trinidad & Tobago) curry is a variation of a curried goat dish I used to cook in a Caribbean restaurant I work at. Traditionally made with scotch bonnet chillies we have adjusted it to not be spicy and have also switched out goat for chickpeas. Thanks to the spice trade routes through the Caribbean, it is full of flavour and depth with spices from the usual suspects of cumin and turmeric to mustard seeds and pimento/allspice found far and wide in the local cuisines. Serving suggestion: make a simple cucumber and red onion salsa, dice both and dress with lime juice, salt and pepper, add a little bit of coriander and coconut cream if you’re feeling a bit fancy!" ----------------- Reheat for Microwave: Heat on med-high for 4-6 minutes, or until steaming hot. Serving tip: just add rice or flatbread. ------------------- Refrigerate and use within 4 days of receiving your order, or freeze for up to 6 months
