Vegan: Falafel with Roasted Vegetables
Spiced, mashed chickpeas formed into balls and baked forming a golden crust, served with a medley of roasted vegetables.
Ingredients
Chickpeas, Sweet potato, Pumpkin, Red Capsicum, Carrots, Zucchini, Cauliflower, Onion, Parsley, Coriander (Fresh), Olive Oil, Fresh Garlic, Himalayan Salt, Ground Black pepper, Jalapenos, Cardamom powder, Baking soda, Cumin Powder.
Preparation and storage notes
For fresh meals remove the lid slightly and heat in microwave for 2-3 minutes or until hot. When frozen it is recommended to defrost the meal first before heating. Time will vary depending on microwave.
