Vegan: Thai Red Curry with Basmati Rice
This is a vegan take on a popular Thai dish that consists of vegetables cooked in a red curry paste, coconut cream and an aromatic blend of herbs and spices.
Ingredients
Basmati rice, Pumpkin, Vegetable stock, Coconut Cream, Green Beans, Red Chili, Bamboo Shoots, Lemongrass, Himalayan Salt, Galangal, Fresh Garlic, Kaffir Lime Leaf, Ground Black pepper, Sweet potato, Cauliflower, White Cabbage.
Preparation and storage notes
For fresh meals remove the lid slightly and heat in microwave for 2-3 minutes or until hot. When frozen it is recommended to defrost the meal first before heating. Time will vary depending on microwave.
