Vegan: Roasted Vegetables with Hummus

One of our favourite vegan dishes with mixed roasted vegetables including beetroot, pumpkin, zucchini and chickpeas.

Ingredients
Sweet potato, Pumpkin, Eggplant, Zucchini, Beetroot, Chickpeas, Red Capsicum, Onion, Brussel Sprouts, Tahini, Parsley, Extra virgin olive oil, Lemon Juice, Himalayan Salt, Ground Black pepper, Fresh Garlic, Mixed Herbs (dried).
Preparation and storage notes
For fresh meals remove the lid slightly and heat in microwave for 2-3 minutes or until hot. When frozen it is recommended to defrost the meal first before heating. Time will vary depending on microwave.
