Creamy mashed potatoes with cabbage and bacon (Irish Colcannon)

Comfort food at its best...A favourite of mine from my time at Ballymalloe Cookery School in Ireland, this is a traditional classic where bacon, cabbage and onions are cooked down and caramelised, then added to creamy milk and butter - mix that into your mashed spuds and there you have it, a classic Irish side!
