A light supper of gently spiced lamb mince with cumin, coriander and eggplant - rich and comforting, but still light enough for a Summer supper. Best eaten with cous cous or steamed basmati rice.

Preparation and storage notes

Remove lid. Heat on high for 2-3 min or until heated through.
