Chicken & Vegetable Soup
I love my soups and this soup will keep the blues away over the rainy months. It's a beautifully light soup, perfect for supper or lunch. I always start with the perfect trifecta - leek, celery and carrots, then add garlic, peas, chicken breast and chicken stock. Let this simmer for a while until the oil turns a beautiful gold colour which veils all those vegetables. When serving I grated over some lemon zest and parmesan cheese, whilst also adding some alphabet pasta for the kids. Super healthy and nutritious. It's sure to warm the cockles of your heart.
