I am Jess the founder of Conscious Kitchen & Co. and I am absolutely over the moon to be able to use this platform to do what I do best and what I am here to do this lifetime. Feed the people their medicine and make it taste bloody good. This business is my absolute passion project and has been bubbling for some time while I collected the knowledge and tools needed. I trained as a chef in 2012 then explored a variety of careers before travelling the world and finding my passion for food again and have been a full time chef since 2016 when I began my culinary journey and started working on yachts. I loved collecting cuisines and developing my palette with each port I expanded my repertoire with adventures from Lebanon to the North Pole. I basically just love playing with food, I love nothing more than finding a new ingredient and creating a recipe with it. I love stumbling into a fresh food market and seeing some incredible local delicacy and getting creative in the kitchen.
My culinary endeavors have always had an important rule of thumb and that is - Whole foods cooked from scratch from a reliable source! After finishing my studies in nutrition last year I realised some of my favourite asian flavours and sauces were full of so many E's and MSG and binders and preservatives and colours and I wondered why I was so chaotic and ADHD was ruling my life, there was endless laps of the kitchen! I saw that the food industry was slowly poisoning the population as more and more people are getting sick from mainstream food and cosmetics. I knew it was my duty and mission to spread awareness around the importance of eating locally sourced, un processed, seasonal and chemical free food. I saw the desperate need for the reconnection in every step of the current global food system and eating the way our ancestors did before big ag and big pharma stepped in with their poison in the name of profit. Health can feel daunting and almost like it's out of our hands and there's an epidemic of greenwashing that's rife. From the toxic 'fragrance' in our 'Earth Choice' products to the known cancer causing glyphosate sprayed on our vegetables. Our soils are dying. Did you know there is only 30 years of farmable soil left? I feel it is our collective duty to do our bit and we vote with our wallet. So by choosing to eat from Conscious Kitchen & Co. you are supporting local growers and businesses, keeping funds in the pockets of people within our own community and away from corporations. It is such a vital aspect of making positive change in the world and I have made it my mission to show others how to do it in the most delicious way. Reducing our plastic footprint with reusable containers that are returned each week or containers that are completely compostable. We will also collect any veggie scraps when we deliver our meals for people aren't able to compost at home and ensure they are returned to where they belong to nourish the soil. If supporting a circular economy; eating wholesome fresh nutrient dense foods; living a vibrant life free from dis-ease is something you always think about but feels like a huge task.
