Imagine the tuna dressed in a beetroot oil, to give colour & depth of flavour, sitting atop an heirloom carrot sauce, dressed with thinly sliced heirloom carrots for texture, and finished with a nice pile of zippy, very-much-in-season wood sorrel... It's a miraculous flavour combination, celebrating the best of produce we can find during these dreary winter months.

Chardonnay Vinegar, Albacore Tuna (Fish), Heirloom Carrot, Wood Sorrel, Olive oil, Lemon, Beetroot Oil, Colatura di Alici (Italian fish sauce), Salt

Preparation and storage notes

Layer the bottom of your serving plate with the heirloom carrot sauce, then layer the raw fish. Scatter pieces of thinly sliced carrot pieces around the fish, and garnish with the wood sorrel provided. Add salt and a drizzle of olive oil to taste, and enjoy.
