Cannoli
Made to a traditional Sicilian recipe, my cannoli are crisp and airy, filled to order with fresh ricotta, pistachios, candied citrus and a little touch of maraschino cherry. They're best kept at room temperature and eaten on the same day.

Ingredients
Egg, Pistachio, Ricotta, Flour, Maraschino, Candied orange & lemon, Caster sugar.
Preparation and storage notes
Cut the tip off the piping bag, and pipe the ricotta filling into the shells. Dip the ends of the cannoli into the candied fruit and pistachio, and dust with icing sugar before serving. Best piped just before you eat!
