Portobello Mushroom, Chestnut & Jerusalem Artichoke Ragu
'Tis the season for MUSHROOMS! We've taken the hard work out of dinner once again, with our textural flavoursome Portobello Mushroom Sauce. Perfect as a base for your Risotto, tossed through some Tagliatelle or layered within some lasagne sheets and besciamella. Note: we cook this down with some meat & chicken bones, so it's not vegetarian friendly.

Ingredients
Celery, Garlic, Onion, Thyme, Rosemary, Carrot, jerusalem artichoke, Chestnuts, Chicken bones, Meat Bones (Beef, Lamb), Portobello mushrooms.
Preparation and storage notes
Transfer to saucepan and warm over medium heat on stovetop, adding a ladle of stock, stirring energetically until smooth consistency is achieved. Toss with your choice of cooked pasta. Garnish with pecorino or parmigiano
