Prawn Agnolotti with 'Nduja
This delectable prawn agnolotti features a firm prawn mousse filling, delicately piped and folded by hand into our gorgeous agnolotti shape. The agnolotti are like little pockets, and there's a perfect little divot in the pasta shape for scooping up the remaining sauce, our umami-rich 'nduja! A treat for a mid-week dinner, or perfect for serving up to family and friends over the weekend.
Ingredients
Wild ocean caught prawn meat, Durum semolina, Egg, White wine, Mussels Water, Chilli, Parsley, Watercress, Breadcrumbs, Flour, Onion, Olive oil, Lemon, Salt, Pepper, Garlic, Colatura di Alici (Italian fish sauce).
Preparation and storage notes
STORE IN THE FRIDGE, OR YOU CAN FREEZE. Bring a large pot of salted water to a rolling boil, add the agnolotti and maintain a gentle boil for 2-3 minutes, or until your desired level of "al dente" is achieved. Strain, add to the warming 'nduja sauce in another pan, toss to coat the agnolotti in the sauce and serve immediately.
