Curried lentil, tomato and coconut soup

I like to leave the texture of this soup a little rougher. The flavours include garlic, ginger, curry powder and a smidge of chilli flakes with an addition of coriander stalks.

Preparation and storage notes

Keep refrigerated for 5 days. Reheat till hot. Can be frozen.
