Honey Glazed Carrots with Dates, Pecans and Yoghurt Sauce
Enjoy the humble carrot with roasted dates, crunchy pecans, and a sweet honey glaze for a delectable twist! Served over a garlicky yogurt sauce. This dish needs to be finished in the oven for 20 minutes.
Ingredients
Carrot, Dates, Greek yoghurt, Pecans, Honey, Extra virgin olive oil, Tahini, Cumin.
Preparation and storage notes
Keep refrigerated until required. REHEAT: in moderate oven (180C), remove the cardboard and cover with foil. Heat for 10 minutes, remove the foil, and add pecans and dates. Heat for another 5-10 minutes or until golden. ASSEMBLE: Spread yoghurt over serving plate. Pile carrots, pecans and dates over the sauce.
