Cauliflower and Shiitake Tart
A flavour combination inspired by a dish from Dinner By Heston, we love the rich umami taste of shiitake marinated in soy and mirin, and how well it pairs with the sweetness of cauliflower. Savoury almond cake filled with green onions, and marinated Shiitake mushrooms, a layer of cauliflower custard and topped with a crumb of dehydrated mushroom, black sesame, panko breadcrumbs, spring onions and togarashi (Japanses chilli powder seasoning).

Shortcrust pastry (Flour, Butter, Water, Salt), Mushroom (Shiitake) Duxelle (Shitake mushrooms, Mirin, Olive Oil, Sugar, Salt), Mushroom Marinade (Mirin, Joseon ganjang, Sugar), Cauliflower Puree (Cauliflower, Olive Oil), Cauliflower Custard (Cauliflower, Cream, Egg yolk, Cream cheese, Salt), Shiitake Mushroom Cake (Shitake mushrooms, Leek, Egg, Brown butter, Almond meal, Flour, Salt, Baking powder), Panko Shiitake Crumb (Panko breadcrumbs, Shitake mushrooms, Togarashi seed and spice mix, Salt, Sesame seed).
