Lamb Pilaf w/ raisins, pickled onion & cucumber
I love a rice dish! And this one is very special. The lamb shanks are slow cooked in a homemade stock, wine and lots of spices, then shredded and added to the rice, which is cooked in an aromatic lamb broth to perfection. We finish with raisins, pickled onions and fresh cucumber. My serving suggestion for you is to add some yogurt to the top of your pilaf as you can see in the photo. It makes it even more special!
