Country pork terrine made for us by Darren O'Rourke and served with local sourdough. Great for picnics, cheese boards, pre dinner nibbles, or with a glass of wine! Serves 4 and loves to hang out with mustard and pickles.

Ingredients

Sourdough, Pork shoulder, Chicken thighs, Caul fat, Chicken liver, Eggs, Garlic, Onion, Brandy, Parsley, Salt, Black pepper, Four spice (quatre epices).

Preparation and storage notes

Keep refrigerated & use within 4 days. Product can be frozen for up to 3 months. Serve with local sourdough. Goes well with your favourite pickles and mustard.
