Southern Baked Chicken Tenders and Veggies

When I visited Austin Texas, the BBQ was incredible and so different to what we grill here on our BBQ's in Australia. I loved the sides too like corn breads, collard greens, creamy vegetable casseroles and the beans! But my oh my was I blown away by the southern fried chicken! A bucket of KFC pieces with grilled corn was my Dad's favourite take away when we were growing up and always a special treat. But the versions I had in Texas were next level! What surprised me the most was how they didn't taste deep fried. It was so much lighter than the versions I recalled from growing up - you could taste the subtle spices too! These days, when I get a Southern chicken craving my go to is actually this baked version. Served with mash, peas and steamed corn. Finger licking good! ;)

Mashed Potato [Potatoes, Milk, Butter (Milk), Salt], Chicken, Corn, Peas, Chicken stock, Buttermilk, Plain flour (Wheat), Panko (Wheat), Paprika, Canola Oil, Celery salt, Mustard powder, Garlic powder, Black pepper, Salt, Ginger, Butter (Milk), Dried thyme, Oregano

Preparation and storage notes

Remove lid before heating. If frozen, put chicken in an air fryer at 200C for 7 mins, otherwise oven at 180C for 10 mins. If thawed, reduce cook time to 5 mins in the air fryer and 10 mins in the oven. Sides can be reheated in mircowave, for 1.5 mins at medium power.
