Chicken Cacciatore
This is an Italian classic hinter dish, simmered low and slow so the skin on chicken thighs are tender and fall apart with a rich aroma from the tomato and garlic sauce. Tends to have kalamata olives traditionally, but I love it with big juicy green Scillian's! Add your choice of Mash or pasta in the sides to make this a full meal.
Ingredients
Chicken Thigh Cutlet, Canned Tomatoes, Capsicum, Onion, Chicken stock, Dry white wine, Tomato paste, Sicilian Olives, White wine vinegar, Olive oil, Parsley, Garlic.
Preparation and storage notes
If thawed, microwave for 2 mins on high, stir and then repeat for another 30 seconds if needed until warmed to your preference. If frozen, microwave on high for 5 mins, stir then repeat for another 30 seconds at a time. Stir well and serve when well heated through.
