Italian Meatballs in our special "simple" Italian Red sauce which I learned to make in Italy (where the meatballs are called Polpette!). We add a dash of Miso to give it a little punch of Umami (savouriness) and make it with Oat milk, so it is dairy free too. I have been making this salad in a variety of ways for years. My sisters call this "Catherine's Salad" and it is included in almost every family feast in some variation. Sometimes I swap out the sweet potato for pumpkin, sometimes I have both but at the moment I just love the warm roasted sweet potato! Sometimes I just use baby spinach, or just rocket - again sometimes both. Sometimes I add our marinated chargrilled capsicums for a pop of colour and sweetness. Sometimes I use pine nuts, but I happen to have some lovely honey roasted macadamias that I want to use, and this feels like the perfect dish for it! Serve warm - or at room temperature. There is always a zingy balsamic vinegar dressing, and there is always feta! But if you happen to prefer dairy free - just add a message in the notes when you order, and I can skip the feta!

The creamy dressing marination over a few hours takes the rawness out of the broccoli making it almost crispy but still fresh which always surprises me. The cranberries in this are my favourite part - the little busts of sweetness, then offset by the bacon and Spanish onion. I think this may actually be my favourite salad!! Well, maybe. A Burrata Caprese salad is pretty hard to beat, but I can't seem to find burrata anywhere anymore. So, this seems to be creeping up into first place! Noice!

I love this salad! I am equally happy having it fully vegetarian, or with a protein to bulk it up into a fuller meal. Loaded with crunchy veggies, spice with a little chilli, and packed with herbs - then sprinkled with crunchy peanuts! I love that it is a combination of sweet, crunchy, sour from the lime and brightness from the herbs. Traditional Vietnamese flavours make this a salad that we have very regularly because not only does it suit all of our diet needs - but it also just tastes dang good! :-)

This is my absolute hands down favourite meal. If I as asked what I wanted to eat as my final meal - it would be this. I fell in love with it in Positano in Italy along the Amalfi coast. Tomatoes there taste different. I think it is the volcanic soil. The closest tasting tomatoes I have found are the cherry tomatoes we get here in QLD, lightly baked and then drizzled with a dash of sherry vinegar. This is a delicate salad. It doesn't travel well. Only available for Pickup. Perhaps it will change your life like enjoying this on the Amalfi coast changed mine as I learned to understand the power of simple ingredients shining!

It's a dish you can use to choose your own adventure with. You could serve this in a bowl on its own; with toppings like sour cream, grated cheese, chilli or jalepenos, coriander guacamole etc; with warm tortillas on the side to dip into it; over rice (plus all the toppings); on hot dogs to amplify them as a Chilli Dog; or as I particularly like it - over a baked potato with cheese melted over the top and then a huge dollop of sour cream. I am relatively new to eating mushrooms, and while I was a non-mushroom eater, I often would experiment with ways to make Beef Wellington that didn't have the mushrooms. Lately I have been eating less and less red meat too, so when I saw this recipe on the Taste.com.au site, I thought I could change it up a little more to this compromise which uses a mix of pork and beef mince, wrapped in bacon with a dash of Dijon mustard, then wrapped in puff pastry and baked until crispy. It's a bit of a winner! I guess they are more like a sausage roll? It looks a little bit fancy and is filled with the goodness we know and love from our juicy rissoles with the added bonus of puffy crispy pastry! Sure to be a firm family favourite!
