Bacon is cooked first and used to give a deep flavour to the base, then the fresh corn AND corn cobs go into the broth to give a bang of corn flavour. Potato is then added to thicken the soup and it is just a warm bowl of summery yellow corn that warms you up inside!

The king of soups! A filling meal on its own, but also warms the soul - even more than chicken soup! Serve with a side salad and crusty bread to fill it out as a full meal but in my opinion, it is perfect on its own!

This is made creamy thanks to the potato which breaks down to thicken the soup in an almost chowder fashion. We add a dash of Miso to give it a little punch of Umami (savouriness) and make it with Oat milk, so it is dairy free too. Choose your topping - our smokey maple syrup glazed Mushroom "bacon" to keep it vegan, or Maple Glazed bacon. Both are a lovely addition, add your preference in the options below. :-)

Cream of Vegetable style soup, made thick without the usual flour and butter calorie dense options. It is as healthy as it looks but as decadent as it smells!

I have been making this salad in a variety of ways for years. My sisters call this "Catherine's Salad" and it is included in almost every family feast in some variation. Sometimes I swap out the sweet potato for pumpkin, sometimes I have both but at the moment I just love the warm roasted sweet potato! Sometimes I just use baby spinach, or just rocket - again sometimes both. Sometimes I add our marinated chargrilled capsicums for a pop of colour and sweetness. Sometimes I use pine nuts, but I happen to have some lovely honey roasted macadamias that I want to use, and this feels like the perfect dish for it! Serve warm - or at room temperature. There is always a zingy balsamic vinegar dressing, and there is always feta! But if you happen to prefer dairy free - just add a message in the notes when you order, and I can skip the feta!

I love this “salad”. It’s loaded with veggies, and served with pasta in a sauce that has been thickened with the pasta water so it should stay lovely and fresh for a few days making it great for ordering ahead for lunches or adding to meals over a few days as a side. I lie this one served at room temperature.

The creamy dressing marination over a few hours takes the rawness out of the broccoli making it almost crispy but still fresh which always surprises me. The cranberries in this are my favourite part - the little busts of sweetness, then offset by the bacon and Spanish onion. I think this may actually be my favourite salad!! Well, maybe. A Burrata Caprese salad is pretty hard to beat, but I can't seem to find burrata anywhere anymore. So, this seems to be creeping up into first place! Noice!

We use our own chargrilled capsicums and the vinaigrette as the basis for the flavour bomb here and add roast Broccoli, and Zucchini, fresh red onion for bite and chopped continental parsley on top for freshness. This is a salad not to be laughed at! I will happily eat this one as a meal or as a side to roast meats, or even with some left-over chicken or lamb mixed through to make it a hearty meal. It also freezes well which is unusual for a salad, but I never seem to have enough left over for that.

I have been saving the ham bones from Christmas, waiting ever so patiently for the weather to start to chill so I could make this one that brings back memories of Autumn growing up - and of my poor mum cleaning pea and ham soup off the ceiling after her pressure cooker "released" it all out the top!!! Sweden, and even Ikea is just too far to go to when I want to fill my craving for these juicy pork and beef mince meatballs and creamy sauce! Luckily, I have a homemade version that tastes just like it (but fresher!) Comes with a side of Peas and Mashed potato. If you have some cranberry sauce or Lingonberry jam - I recommend adding a spoonful of that on the side too!

This is a relatively simple curry that gives more of a flavour bomb than you would expect! Healthy and filling because of the chickpeas, spicy from the paprika, cumin and then with the addition of cayenne pepper for a bit of a kick. Definitely needs the yoghurt and a squeeze of lime juice to round it out. Served on a bed of rice to make it a full meal.

This is a firm family favourite in our house. A warm bowl of Teriyaki "mince", on rice, served with steamed Edamame. We make batches of this using the V2 Mince and then freeze in individual serves, so it is always on hand in the freezer, ready for a meal for any hungry vegetarians in the house! We use the Mirin, soy and Sake brought to us by our brother-in-law who lives in Japan. This gives an authentic taste to this non authentic version of Teriyaki! Served on a bed of Sushi Rice this is a warm bowl of yum!

Vegetarian lasagna is more popular in our house and this one features a beautiful spinach and ricotta layer with a touch of fresh thyme and gratings of nutmeg that add to its flavour and aroma boost. That is layered between our fresh basil tomato sugo, and fresh pasta, then topped with mozzarella and baked until golden brown. Serve with a side salad and some crusty bread for a delicious meal for the whole family with love - even the meat eaters!

This is a very popular option on our site - add it as a side to a main meal or BBQ or just have it on its own. Slow-roasted cauliflower florets are drowned in a cheesy Bechamel sauce, and then topped with breadcrumbs and Parmesan cheese. I’d like to think adding more veggies to your diet is always a good thing but I opt for cheesy over healthy on this one.

Oozie, gooey, comfort food at its best! Creamy Gruyere cheese and Monterey Jack cheese add colour, flavour and that cheese stretch! Topped with golden crumbs that give a lovely crunch to the meal. This one is a guilty pleasure! Add a light side salad if you want to make it a healthier dinner, but I would be lying if I said I always have it with the salad!! :-) Another family favourite, which we usually have with gluten gluten-free pasta, flour and breadcrumbs - which is for my daughter, but means we can all eat it the one meal. I am relatively new to eating mushrooms, and while I was a non-mushroom eater, I often would experiment with ways to make Beef Wellington that didn't have the mushrooms. Lately I have been eating less and less red meat too, so when I saw this recipe on the Taste.com.au site, I thought I could change it up a little more to this compromise which uses a mix of pork and beef mince, wrapped in bacon with a dash of Dijon mustard, then wrapped in puff pastry and baked until crispy. It's a bit of a winner! I guess they are more like a sausage roll? It looks a little bit fancy and is filled with the goodness we know and love from our juicy rissoles with the added bonus of puffy crispy pastry! Sure to be a firm family favourite! These also freeze well so grab a few for the freezer for those nights you feel like something a little but special but don't have the time to whip it up!

Lasagna. Another labour of love but well worth the time investment, and when we make it, we always make extra as we can’t seem to stop eating it. It also freezes well so I cut up and freeze individual serves as it is a good one to stock up on for the times you need to quickly grab and reheat something for dinner or lunch. For our meat lasagna we use our 24 hour slow cooked Bolognese sauce, and layer it with cheesy Bechamel sauce, and fresh pasta. It is then topped with mozzarella and baked until golden brown. We always make our lasagna a day before we want to eat it as it sets better and in our opinion tastes better too! It will just need a gentle reheat in the oven to be ready but of course you can enjoy it fresh too! Serve with a side salad and some crusty bread for a delicious meal the whole family with love. Small serve is 450 grams.

While traditionally made with Veal, we make it Beef, combining a slow cooked Thor's hammer and the signature osso bucco cut of beef. The meat is fall apart tender, in a rich tomato sauce topped with a sprinkle of lemon and parsley gremolata to give it lift. Add mashed potato and peas to make it a complete meal.

A traditional Honey Mustard Sauce on baked chicken legs - this is finger licking good food! Served with mashed potatoes and a side of seasonal veggies to make it a full meal.

Also known as Tuna Casserole pasta bake, tuna, corn and pasta in a creamy white sauce, topped with crunchy parmesan breadcrumb topping.

Golden and crispy baked Salmon patties are a great freezer staple! Made with fresh salmon keeps them light. Serve with mash and veggies or coleslaw for a meal, on buns with tartare sauce and lettuce for burger night, or even a starter with a dipping sauce. 3 patties per serve.

We eat this on it's own, it is a meal in itself - loaded with bacon, veggies and with a savoury sauce, eggs from our chooks, and sprinkled with green onions for bite. A wholesome meal or serve with a stirfry and use this as the base!

Indian Lamb Curry with slow cooked fall apart Lamb and a warm spice mix. Based on Rick Steins recipe in the book Rick Stein's India. Served with Basmati Rice.

Rich Coconut Massamam Curry Sauce, over slow cooked, falling off the bone lamb shanks and potatoes. Topped with coriander and fresh chilli, and served with fresh slices of tomato. Served with a side of jasmine rice to make it a full meal.

Sweet from the maple syrup, roasted mushrooms with a dash of Liquid smoke to give that smokey, savoury flavour.

This is a great topper for a range of meals, from soups, to salads, or even on eggs.

This isn't the same as rice, but it is a much lower calorie option, with a neutral flavour which makes it a great healthy alternative for rice in stir-fries and curries. The addition of Coriander gives it a brightness and makes it a great partner for Thai or indian curries and cajun style flavours.

Steamed Jasmine Rice

Al Dente Pasta, drizzled with Olive oil, and sprinkled with Parsley. Makes a great base for many, many sauces.

Really this is just a posh potato bake also known as Dauphinoise. Layers of Dutch Cream potatoes, cheese, cream and fresh thyme. Fine as a vegetarian main, or as a side to a roast dinner. Rich, Creamy and Delicious!

We make the paste in the mortar and pestle, then blend in the avocado. It makes a difference - trust us!

My kids call this Armadillo (hah!), and in our book no Mexican meal is complete without it! The Jalapenos add kick, while the lime juice really brings out the mexican favours.
