Roast Vegetable Pasta Salad

I love this “salad”. It’s loaded with veggies, and served with pasta in a sauce that has been thickened with the pasta water so it should stay lovely and fresh for a few days making it great for ordering ahead for lunches or adding to meals over a few days as a side. I lie this one served at room temperature.
