Roast Vegetable and Cous Cous Salad

We use our own chargrilled capsicums and the vinaigrette as the basis for the flavour bomb here and add roast Broccoli, and Zucchini, fresh red onion for bite and chopped continental parsley on top for freshness. This is a salad not to be laughed at! I will happily eat this one as a meal or as a side to roast meats, or even with some left-over chicken or lamb mixed through to make it a hearty meal. It also freezes well which is unusual for a salad, but I never seem to have enough left over for that.
