Beetroot and Dill go so well together, and when you add the slight bitterness and sour Creme Fraiche this comes together as almost a Borscht soup in salad form. Lovely on its own or as a side to heartier dishes like roasts, stews or casseroles.

Beetroot, Vegan Creme Fraiche (Water, Lime juice, Cashew nuts, Salt), Walnuts, Baby spinach, Extra virgin olive oil, Dill, Balsamic vinegar, Green Onion, Salt, Garlic, Black pepper.

Serve slightly warm, or at room temperature. Keeps in the fridge for 4 days.
