Roast Sweet Potato with Lime Cashew Cream and Curry Cashews

I just am a sucker for roasted sweet potato. It becomes so delicious when roasted, getting a caramelised crust while staying soft and fluffy in the middle. The addition of the lime cream gives a burst of freshness and the curry cashews a layer of warmth. A more complex dish than it looks, but certainly one of our faves.
