Chargrilled Coconut Chicken with Curry Cashews

Chargrilled Chicken thigh or breast marinated in coconut milk, lime and red curry paste, then grilled to a smokey finish. The addition of the lime cream gives a burst of freshness and the curry cashews a layer of warmth. A more complex dish than it looks, but certainly one of our faves.
