Chicken Quesadillas
These Quesadillas have a Chicken Fajita style filling, made bulkier (and healthier??) with the addition of refried beans, topped with cheese which you can then roast/fry until the tortillas are crispy and the cheese is melted! Delicious on their own, or add Guacamole, Salsa, Sour cream and even more cheese! Serving is per Quesadilla.
Ingredients
Chicken thighs, Capsicum, Shredded Mexican Cheese, Refried beans, Tortilla, Onion, Olive oil, Salt, Garlic, Garlic powder, Cumin, Paprika, Oregano, Black pepper, Cayenne pepper.
Preparation and storage notes
If frozen, microwave for 40 seconds to thaw, then wrap in foil, bake 30 mins at 180C until crispy, or place quesadilla in a medium skillet, cook for 3 mins, then flip and repeat until crispy. Can also be toasted in a Sandwich press until crispy.
