This month we are changing our table loaf from our classic pain de campagne to a long fermentation miche, made with Yecora red wheat, by only mixing the dough slightly and doubling our fermentation time, we make for a deeper flavour and an easier to digest loaf of bread. Showcasing the work of local farmers from Burrum biodynamic and our miller friend, James fisher.

The perfect cheese companion, the depth of rye blends beautifully with the sweetness of walnuts. We use a metal recipe, which is a blend of 50% heritage white flour and 50% of lightly sifted rye flour which makes it a lighter loaf than some of our other rotation ryes.
