Za'atar Roasted Butterflied Chicken with Garlic Yoghurt
A whole chicken, butterflied for even roasting, marinated in fragrant za’atar, garlic, and lemon, then ready to roast until tender and golden. Served with a smooth garlic yoghurt for dipping or drizzling, this dish is packed with warm, herby flavours and a hint of tang. Perfect for a relaxed family meal or sharing with friends.
Ingredients
Chicken, Brine (Water, Ice, Rock salt, Sugar), Lemon, Za'atar, Sesame seed, Thyme, Red onion, Garlic, Sumac, Dried oregano, Greek yoghurt, Olive oil.
Preparation and storage notes
STORAGE: keep in fridge COOKING INSTRUCTIONS: BBQ: Remove chicken from bag. Heat on BBQ to medium flame. Season chicken with salt & pepper then lay on BBQ. Drop the lid down and BBQ for 10 minutes each side. Rest for 10 minutes with BBQ off and lid down. Remove skewers and serve with yoghurt provided. OVEN: Sear chicken on both sides in a frypan. Place on an oven tray with a little extra olive oil and bake 180c for 30-40 mins.
