Ricotta & Pumpkin Salad w Quinoa, Seeds, & Herbs

Sophie's review: "OMG Babe, how do you make healthy things taste so good? I don't get it." This "salad" features all my favourite things (wife and kids excluded), fresh herbs, seeds and nuts, dried fruit, and ricotta. The pumpkin is slowly roasted to perfection and the salad strewn casually across for that "just stepped out of the cafe" look.

Pumpkin, Water, Quinoa, Ricotta (Milk), Pepita and sunflower seeds, Dried apricot, Mixed fresh herbs, Oilve oil, Dried cranberries, Almonds, Himalayan salt

Preparation and storage notes

Heat pumpkin in microwave or oven, Toss through dressing (not supplied), nuts, quinoa etc. before serving. Feel good.
