Mediterranean Roasted Veg & Quinoa Bowl

This is what I make when I need to convince myself I'm a functional adult who eats vegetables and makes responsible life choices. Roasted Mediterranean veg—eggplant, zucchini, capsicum, cherry tomatoes—all charred and caramelised until they're actually delicious instead of just virtuous. The quinoa's fluffy and herby (is that a word? It is now), tossed with lemon, olive oil, and enough garlic to keep personal space enthusiasts at bay. There's feta crumbled on top because everything's better with cheese, and a drizzle of balsamic that makes the whole thing look like you tried. It's vegetarian, it's protein-packed, it's got actual nutrients, and it tastes good enough that you won't resent your past self for ordering it. This is the meal equivalent of getting eight hours of sleep and drinking enough water—theoretically possible and surprisingly satisfying when it actually happens.
