Egg Coconut Masala
This is Rick Stein's recipe, he is one of my favourite chefs and I love his Sub-continent tours. I also love eggs and cricket. A fresh, zingy curry with a warm coconut sauce flavoured with fresh ginger and turmeric. Serves 1 or 2 or a larger size for the hungrier customer
Ingredients
Coconut milk, Red Onion, Egg (Free Range), Fresh Ginger, Green chilli, Fresh coriander, Turmeric, Kasmiri Chilli, Garam masala.
Preparation and storage notes
Heat in microwave, Eat and enjoy like Rick Stein would - with 3 bottles of wine and a loud chat about cricket with someone who doesn't understand English or the game.
