Onion & Oyster Mushroom Bahji
No picture of this exists because I made it up. Normally, I wouldn't recommend trying anything on a menu that hasn't been properly vetted by industry peers or decades of fine-tuning, but in this case I know for a fact that it works and is surprisingly tasty. Marinated mushrooms, bonded with onion in a light chickpea batter and fried to golden perfection. Be pleasantly surprised, eat onion & mushroom bahji!! These are about the size of a burger patty 2 for a side or 4 as a main. Serve with Mango Chutney & Raita, or Greek yoghurt. Makes a great vegan burger.
Ingredients
Onion, Oyster mushrooms, Chickpea flour, Flour (GF), Water, Fresh coriander, Madras Curry powder, Baking powder.
Preparation and storage notes
Reheat in oven (220 for 10mins) or air-fryer. Serve with Raita, and mango chutney from the back of the fridge (behind the mustard and next to the half jar of capers)
