Kousa Mihshi (Lebanese Stuffed Squash)
Ok - for realsy's I've never cooked this before but I am, (if anything over) confident that I can make this simple yet nourishing dish transcendent. Is what I used to say and I was right!! So deliciously right!! "Kousa mihshi, which translates as “stuffed squash” in Arabic, is a satisfying yet light preparation that's popular across the Levant. The dish consists of hollowed-out zucchini filled with a mixture of spiced ground lamb and rice and slowly braised in cinnamon-accented tomato sauce until the meat is succulent and the rice tender" - couldn't have said it better if I'd copy and pasted it yourself!!
Ingredients
Zucchini, Currants, Italian tomato, Lamb Mince, Onion, Basmati rice, Tomato paste, Parsley, Apple cider vinegar, Garlic, Cinnamon, Cumin, Black pepper, Cloves.
Preparation and storage notes
Reheat in oven with lid on for 25 mins or until warm, or heat in microwave for 2 mins at a time resting between blasts. Consume with GCF Famous Grains or spend 4 hours making your own...
