Vegetarian Gumbo
Don't tell the good people of Louisiana, but I do use tomato in my gumbo! The Cajun "holy trinity" of bell pepper, celery, and carrot w beans and corn Full of okra to bind the sauce, this is a soupy gravy-y dish best served with rice and a southern drawl!
Ingredients
Capsicum, Italian tomato, Okra, Red kidney beans, Black beans, Celery, Onion, Cajun Spice, Garlic, Black pepper.
Preparation and storage notes
Heat in microwave for 4 minutes, stirring half way though. Alternatively bring to a simmer on stove for 5 minutes. servie with rice, rice and beans, pasta, mash, whatever tickles your fancy.
