Chicken Provencale
Correctly "Poulet a la Provincale", diced chicken thigh flavoured with tomato, olive and risch broth. It's Chicken Provinchal to the rest of us "not eating garlic whilst chain smoking cigarettes, and kissing with our mouth closed heathens". It's a simple southern French chicken of diced chicken thigh in a tomato stew deeply flavoured with olives & anchovy fillets.
Ingredients
Italian Cherry Tomatoes, Chicken thighs, Home-made Chicken Broth, Onion, Capsicum, White wine, Kalamata olives, Carrots, Leek, Anchovy, Extra virgin olive oil, Thyme, Garlic.
Preparation and storage notes
Reheat in microwave or in an oven at 180 for 25-30 mins. Talk loudly about how much better food tastes in France and refer to all of Europe as "the Continent". Ask if people have been, and assume they haven't.
