Roast sweet potato and goats cheese lasagne

A fresh and light vegetarian lasagne made with roast sweet potato, braised leeks, tomato passata and goats cheese. Serve with fresh arugula or a simple green salad.

Tomatoes, Sweet potato, Leek, Lasagne sheets, Goat's cheese, Extra virgin olive oil, Baby spinach, Parmesan, Sea salt, Ghee, Rosemary, Oregano.
Preparation and storage notes
Place lasagne in the oven and cook at 180C for 40 minutes. Serve with a simple green salad.
