Kolokithopita, Greek Pumpkin Filo Pie with Tzatziki
Middle eastern spices, think cumin, coriander, cloves, paprika, cinnamon and cardamom, are roasted with pumpkin and cabbage and gently layered and rolled in filo pastry. The filo is then coiled in a pie tin and baked until crisp. Serve it with a simple green salad and the tzatziki on the side. Available in a single serve or to serve 4 people as a medium.
Ingredients
Leek, Greek yoghurt, Pumpkin, Savoy cabbage, Filo pastry, White rice, Olive oil, Cucumber, Currant, Oregano, Mint leaves, Parsley, Garlic, Baharat, Cumin seed, Lemon zest, Poppy seeds, Sesame seed.
Preparation and storage notes
Remove glad wrap and bake at 180C for 30-40 minutes or until golden.
