Warm Gingerbread Pudding with Mandarin caramel sauce

These puddings are light and fluffy, made with brown sugar, golden syrup and candied ginger. The mandarin caramel sauce is lightly warmed to finish them off. Just add a dollop of cream or your favourite icecream! The large pudding serves 6-8 people.

Preparation and storage notes

Can be eaten at room temperature or microwaved for 30-40 seconds on high.

Place on an oven proof tray, lightly greased. Cover loosely with foil and bake for 12-15 minutes at 180C.
