Xinjiang Lamb Rice Pilaf
This is an aromatic Cumin scented lamb rice dish, that makes the most of spring lamb! Its delicious served with fresh lemon wedges and cucumber yoghurt . Its amazing that something so simple could be so tasty!
Ingredients
Chicken stock, Lamb rump, Carrot, White rice, Greek yoghurt, Onion, Lemon, Sultana, Vegetable oil, Cucumber, Fresh coriander, Minced ginger, Garlic, Chilli flakes, Cumin seed.
Preparation and storage notes
Remove lid from the rice tray and cover it with foil. Heat in oven at 180C for 12-15 minutes or until hot. Serve garnished with lemon wedge, cucumber yoghurt and coriander.
