Tom Kha Gai - Thai Coconut Chicken & Galangal Soup
Galangal is an aromatic root vegetable which is a little similar to ginger but not as pungent and spicy. Combined with coconut milk, lemongrass, tomato and abalone mushrooms, this soup is both decadent and warming to give you the ultimate in comfort food.
Ingredients
Spring onion, Chicken stock, Coconut milk, Chicken thigh fillets, Chopped tomato, Oyster mushroom, Golden eschallot, Lime juice, Galangal, Fish sauce, Lemongrass, Fresh sliced chilli, Fresh coriander, Palm sugar, Kaffir lime leaves.
Preparation and storage notes
Remove soup from the pouch and pour into a saucepan. Gently bring to the boil and remove from the heat. Serve immediately garnished with coriander and spring onion
