Sri Lankan Fish curry, sweet potato, eggplant, basmati rice
Inspired by the Sri Lankan yellow fish curry, we created our version of this comforting, hearty Far Eastern dish. Made with an array of fresh ingredients, like lemongrass, ginger, chilli, tamarind, coconut cream and curry leaves, take this exotic coconut curry paired with local fish fillets, accompanied with steamed rice to the next level! If you'd like a larger portion of the curry, opt for the 2 serve and just cook your own rice at home to make it a complete meal.
Ingredients
White Fish, Sweet Potato, Coconut Cream, Capsicum, Tomato, Tamarind Paste, Vegetable oil, Lime, lemongrass, Olive Oil, Salt, Ginger, Garlic, Red Chilli, Curry Leaves, Turmeric, curry powder, Eggplant, Basmati Rice, Fresh Coriander.
Preparation and storage notes
Pierce film and microwave for 2-3 minutes or until piping hot. Microwave for further 2-3 minutes if frozen.
