Crisp, fresh seasonal vegetables are simmered with coconut milk, chilli, coriander and ginger before being topped with pan-friend tofu. Accompanied by jasmine rice.

Preparation and storage notes
Pierce film and microwave for 2-3 minutes or until piping hot. Microwave for further 2-3 minutes if frozen.
