Baked sweet potato with lentil, swiss chard, fried onions and herb labneh
Roasted sweet potatoes topped with a delicious mix of lentils, stewed swiss chard, crispy onions, instead of the usual unhealthy toppings, makes this a truly delicious vegetarian meal to enjoy any day of the week! To add some freshness to the dish, we serve it along with a herb labneh.
Ingredients
Silverbeet, Greek Yoghurt, Brown Onion, Sweet Potato, Lentils, Vegetable oil, Olive Oil, Lemon, Garlic, Fresh Mint, dill, Salt, Pepper, Ground Coriander, Cumin.
Preparation and storage notes
Remove film and labneh and microwave for 2-3 minutes or until piping hot. Microwave for further 2-3 minutes if frozen.
