Thai green chicken curry with eggplant
It’s the curry that usually makes you sweat and swear whilst guzzling down water and wiping tears from your eyes when you order one at a Thai restaurant! Luckily, when we make it, we dial back the spiciness substantially. However please note the Thai Green Curry is spicy compared to some of the other curries on our menu. Packed with fresh vegetables and generous pieces of chicken our Thai Green Chicken Curry is a brilliant, satisfying dish. Just cook your own rice at home to make it a complete meal.
Ingredients
Chicken, Brocolli, Pumpkin, Eggplant, Coconut Cream, Coconut Milk, Garlic, Ginger, Lime, Coriander, Fish Sauce, thai curry paste, Kaffir.
Preparation and storage notes
Pierce film and microwave for 2-3 minutes or until piping hot. Microwave for further 2-3 minutes if frozen.
