Our “traditional" buns are made using a three step 24 hour process which includes a prefermented dough to create a light base to host fresh citrus and ginger, spice mix including cardamom and nutmeg, a blend of currants, cranberries and sultanas and Lard Ass Butter. This is then shaped and slowly fermented overnight to create a flavour packed bun.
