Al Dente's Weekly Menu - Crab Ravioli is back in town!
Special of the week: fresh crab ravioli, same old recipe, but we serve them to you fresh! You favourite Spaghetti Cacio & Pepe and Gnocchi alla Sorrentina are still available, and we know you need them! We're making Vitello Tonnato again this week, and Olive Ascolane were so loved that we can only prepare them again for you. Don't forget your panettone and pandoro along the way! Boca Peach Gelati is staying for another week!
We crumb salty olives one by one, removing the pit and stuffing them with a beef and pork mince first, and adding a good amount of Pecorino in the centre too! We then roll them in egg and breadcrumbs and we pack them for you to cook at home! They're small, but delicious! The perfect addition to your Christmas antipasti, and we deliver them to you with a finger-licking homemade mustard mayonnaise!
This plump, round ravioli stars beautiful spanner crab from Fraser Island, brought to us by our friends at Clamms Seafood. The filling also includes green apples, potato, chilli, parsley, lemon zest and garlic. Crab, apple and chilli is a traditional combination, especially in southern Italy. The potato makes the ravioli extra creamy. We will add a tub of lemon, parsley and chilli butter to each order - it's the perfect dressing for this ravioli. Now fresh, for you to finish off in the pan!
Famous Al Dente Cacio e Pepe but done the classic way! We're infusing our spaghetti with black pepper before extracting with our Monferrina P6 pasta machine. Everything you could need will be included; salted peppery butter, pecorino, and a lot of Al Dente love! Buonissimo!
If you've had our soft, pillowy potato gnocchi before, you know just how good it is! This Gnocchi alla Sorrentina just needs to be baked in the oven for 15 minutes, to heat the gnocchi and melt all the delicious mozzarella. I'm often pretty jealous of the kids Gnocchi Napoli, so this is the perfect remedy. Cheesy, warm, comfort food.
This is a typical ricotta-and-spinach ravioli - except better! We roast the spinach so there's a lovely depth of flavour and mix it with delicious Ricotta cheese from That's Amore. There's so much flavour in each triangle so you can feel free to keep life simple and toss it with burnt butter and sage. NOTE: Our Ravioli Triangolo doesn't come with a sauce included, but we recommend you purchase our Burnt Butter & Sage Sauce or even our Salsa al Pomodoro as an accompaniment.

We've been working on this recipe for quite some time now and are so happy to share it with you! Davide's been building the rye sourdough mother, which he's aptly named "Ercole" (Hercules) since the start of Lockdown #1 last year. Mezzelune means 'half moon' and it perfectly describes the shape of these semi-circular ravioli. They're filled with creamy potato, pancetta and caramelised onion and because too much pancetta is never enough, we're topping them with a little extra crispy pancetta. A very special recipe created by our very special Chef Kevin! A filled tortello, with a slightly different shape that resembles a boat, as in Indonesia it's common to move around with boats rather than using cars. Kevin has been working on combining the ingredients of his special pasta to incorporate the flavour of cream cheese, calamari and squid ink for an extra touch of seafood goodness. Serve with a lemon and chilli butter sauce provided with your serve of tortelli. Enjoy!

This sunny Sicilian pesto alla trapanese includes tomato and almonds. It's perfect for spring and great with our gnocchi and pappardelle. We make it with a mixture of fresh and tinned Pugliese cherry tomatoes and pistachios as well as the traditional almonds. Two cheeses are always better than one so we use a mixture of parmigiano and grana padano.

Balsamela is an organic condiment made from 100% organic apple juice. Made from a traditional local recipe, it has a sweet and sour flavour complemented by the aroma of cooked apples.
This vinegar is acetified slowly and naturally, never using heat, the flavors and aromas coaxed out artfully and patiently. After the vinegar is obtained, it is transferred to large Juniper barrels (as opposed to the traditional oak used by San Giacomo). This intense wood adds a new layer of flavor and aroma to the vinegar, certain spiciness and deep notes of incense. It’s never diluted with water – just pure, delicious fine vinegar. The product with the Argento Label has usually been left to mature 6 or 7 years longer than the Aragosta Label Vinegar. Although it falls with the area of the ‘Grana Padano’ DOP, the Grana produced in the province of Trento (particularly significant in the Val di Non area) can be distinguished from the others by the brand ‘Trentino’ that is clearly visible on the form. The milk from mountain areas (during the summer the pastures are at 7-800 metres) is used in its production, giving it a distinctive flavour that makes it stand out from other, similar products. Texture: hard, grainy, more or less intensely yellow paste depending on the length of ripening Taste: harmonious, dry and intense with traces of grass when produced with the milk of open pasture grazing animals Served with: full bodied, aged, red wines but also young, sparkling white wines. Fresh fruit (Kaiser pears), marrow chutney. Balsamic Modena vinegar, crusty bread.
Monforte is the flagship cheese of Section 28, handcrafted in very limited quantities from the best cow’s milk produced by the dairy. It is a raw milk, semi-hard cheese with a complex, but not overpowering flavour. It has an initially sweet, milky and fruity taste that is balanced by emerging brothy and roasted nut flavours with a subtle earthy undertone. This delightful Dutch cheese is matured for around 1 year. It has a soft, lingering creaminess and a touch of earthy nuttiness to the taste. The cheese is similar in style to an aged Gouda and is a very welcomed addition to our cheesey line up. We love this cheese in a fonduta (in fact, we serve it in our restaurant) with a touch of truffle, alongside some root vegetables like potato and beetroot.

Fregola is one of Sardinia's most iconic foods and there is a long tradition of recipes using local ingredients, especially seafood, beans, meat sauces and various vegetables. It is also used in soups and for stuffings and once cooked and cooled can be made into salad. Fregola is similar in appearance to couscous, but it is in fact a pasta which is produced with coarsely ground semolina and water rolled into irregular pearls of pasta which are dried in the sun and then toasted.

Taragna is a mixture of standard polenta and coarsely ground buckwheat flour. Traditionally, it comes from the Valtellina province of the Lombardy region. Aged on lees for 18 months before bottling with no fining or filtration.

Two single vineyards – Hayview Mount Barker Shiraz and Celestial Bay Margaret River Malbec form a harmonious and delicious blend in the second red from Break Free Wines – Little Wing. Having said that if you like young, powerhouse Riesling this will reward the patient and impatient alike. Intense lemony/lavender nose, clean bright and lifted. The wine is very delicate and fine, with lingering lime fruit. A beautifully balanced Riesling of acid, fruit, and texture. A high-quality wine with many years cellaring potential. Versatile wine that will complement a variety of cuisines, drinks beautifully now with grilled Whiting.
Beautiful Chardonnay from Mornington Peninsula. The Mill Hill vineyard lies 270m above sea level, and is the highest and one of the more exposed sites in the region. This ensures a long ripening period which creates high levels of natural acidity which persist through to the wine. This wine is complex, restrained, minerals and citrus on the nose. With those same flavours carrying through to the palate. There is a savoury minerality edge to the wine with great length and persistence. The wine has many years ahead of it.

A dash of white pepper and spice leading into a savoury finish. This wine feels generously elegant and almost has the ability to transport you from your iso-mood to vacay-babe! The fruit is handpicked across three vineyards and whole bunched pressed using a gentle champagne press cycle. No enzymes or sulfur are used and the juice is oxidatively handled to get rid of oxidative enzymes early on in the winemaking process. The wine is left at ambient or if needed chilled to 15 degrees and transferred to old French oak barrel with full solids and minimal sulphur is added. The wine is then left to ferment with wild yeast, left until the following summer, then removed from lees, and transferred to a tank. The resulting wine is crisp, with minimal filtration, but crisp vibrancy and complexity remain.
2016 was a warm growing season, bringing rich, ripe flavours to this blend. III is our traditional blend, which combines the 3 Nebbiolo clones we have growing at Pipan Steel Wines. It takes the structure of Clone 7 and layers the perfume of Clone 9 with the savouriness of Clone 10, producing a complex satisfying Nebbiolo.
The 2019 Pinot Noir has aromas of dark berry fruits such as blackberry, plums and cherries with background aromas of dried herbs and spices. It has a soft entry with mid palate fruit sweetness and lovely texture. The finish is long with balanced acid and fine tannins. Bright, medium to deep red/purple colour. The bouquet is meaty/charcuterie-like and spicy, earthy, smoky, quite full-bodied for a Mornington pinot and it fills the entire mouth.
Fresh, frisky, strawberry and mint, perfumed too, and a modest amount of smoky earthiness. Limpid and fine, cool feeling, with a stroke of emery tannin, sap and spice, and a lively finish of excellent length. This wine is soft and round, full and delicious on the palate, the oak is noticeable but far from domineering. A very attractive pinot, long and satisfying. Beautifully made and so pleasing to drink.
Deeply aromatic, opulent and powerfully ripe. Plush tannins and layers of dark fruit deliver a robust palate and serious cellaring potential. The Shiraz Vioginer is a selection of the best Shiraz Viognier parcels, crafted from the Murrumbateman vineyard. It spent 18 months in oak, rather than its usual 12. Has a lovely freshness and purity with crushed berry aromas, plums, a musky floral thread, complexities of spice, dry herbs and understated smoky oak. It’s medium-bodied with a lovely silky texture, impressive intensity of lingering flavour and ripe, soft tannins in perfect harmony.
Andrea's favourite dessert wine. Before harvest, the best grapes are personally and exclusively selected by the family members, in order to make them dry naturally until February. Tessari’s sweet wine, Tre Colli, is a dream. The colour of honey. The nose is fragrant; dried fruit, raisins, summer white flowers and tiny amount of custard. Just the right amount of sweetness vs. dryness. Perfectly paired with lighter desserts and cakes, like our Latte e Caramello, or our Torta Sabbiosa!
A personal favourite after dinner sweet wine of Davide's... A semi-sweet fortified Durif. Perfect with dark chocolate or hard cheeses, served chilled or at room temperature. Drink within 14 days of opening.
Nazionale is made with hops grown in Cussanio, just a few kilometres away from the Baladin brewery. An intentionally simple beer made with 100% Italian ingredients: Italian water, barley malt, hops, yeasts and two Italian spices (organic bergamot from Calabria and coriander) which combine to create harmony and originality. Light earthy, spicy hops with a slightly bitter and dry finish. All of Baladin’s beers are non-filtered, refermented in the bottle and non-pasteurized Baladin uses six strains of native yeasts (Lievita Madre) in their production. 6.5% alcohol
Nora is made with Kamut® (also known as Khorasan), an ancient un-malted grain which is twice the size of modern-day wheat and is known for its rich, nutty flavour. Kamut is also thought to be more easily digestible than modern wheat. The beer is seasoned with fresh ginger, orange peel and myrrh. The beer's aroma is floral, spicy and citrusy; and it tastes refreshing, with a honeyed citrus notes and tingling ginger heat on the finish. Aged for a minimum of 9 months, the origin of Grana Padano dates back to the Cistercian monks of the Chiaravalle Abbey. From the polders of northern Italy, the cheese is produced with milk from free-range cows that are let to graze on fresh forage and silage. Full-bodied, this hard cheese delivers a savoury and nutty touch with a dense and somewhat flaky texture. Creamy, mild and with a lingering aftertaste, it can be enjoyed on its own or as an accoutrement to your dish. We're happily obsessed with making soft gnocchi that taste like potato not flour. These heavenly pillows don’t need a complex sauce - a little tomato, a drizzle of oil, a grating of cheese and dinner is done. Another option is a burnt butter, garlic and sage sauce.
